If you’ve got a craving for salty, crunchy French fries, a good alternative is choosing sweet potatoes over regular potatoes. You’ll still satisfy your salt craving, and you’ll get a good dose of Vitamin A at the same time. In 1992, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value.
