Food of the Week (Part II): Nutritional Yeast

Yesterday, Her Active Life introduced you to what was likely an unfamiliar food: nutritional yeast. This delicious, cheesy flake or powder makes an excellent addition to any savory item, and can is a delicious alternative for use in cheesy sauces or toppings when a vegan lifestyle or health concerns call for a cheese-free alternative.
Today, enjoy the taste of nutritional yeast in this simple, cheesy macaroni recipe that freezes well and is delicious hot or cold.

Ingredients
1/2 cup nutritional yeast 1/3 cup flour 1 cup vegetable broth 1 1/2 cups water 1 1/2 tbsp soy sauce 1/2 tsp garlic powder 1/4 tsp paprika 1/4 tsp dried basil 1/4 tsp oregano 1 4-ounce can tomato sauce 2 cups macaroni, cooked
Pre-heat the oven to 350 degrees. Combine the nutritional yeast and the flour in a saucepan. Place the mixture over low heat, stirring until lightly toasted. Slowly add the broth, stirring to make a thick batter.
Add water 1/4 cup at a time until the sauce is smooth and slightly thick. Add the remaining ingredients, except the macaroni, and stir well. Place the cooked macaroni in a casserole dish and stir in the sauce.
Bake for 30 minutes, or until sauce bubbles.
