granola-barsAny busy woman needs a stockpile of easy snacks and meals to grab for a quick breakfast or a mid-day pick-me-up. While the grocery store has aisles of convenient bags and bars, nothing beats homemade when it comes to taste and nutrition.

Skip the sugar, preservatives, and trans fats found in commercial granola bars with this protein-packed alternative. Nuts and seeds provide healthy fats, and soy protein gives a boost of isoflavones. You probably have most of these ingredients sitting around the kitchen, and you can find Ener-G egg replacement at a natural grocery.

Ingredients:
3 cups rolled oats
1/2 cup protein powder
2 tsp baking powder
2 tsp cinnamon
pinch of salt
1/4 cup applesauce
1 tsp vanilla
2 eggs equivalent of Ener-G Egg Replacement
1/2 cup soymilk
1/2 cup raisins
2/3 cup variety of nuts (I use hempseeds, sunflower seeds, and pumpkin seeds)
Maple syrup or agave nectar to taste

Preparation:
Mix together the dry ingredients (except raisins/nuts). Combine the wet in a different bowl, then add to dry. Mix it all up with the raisins/nuts, and press into an oiled baking sheet. Bake for 20 minutes at 350 degrees, then let cool and cut into bars. These bars are great from the freezer, so make a double batch and wrap them individually for easy to grab snacks.

Looks good!  I imagine it works fine just using the two eggs instead of the replacement thing?

Today’s latex satin sheen paints are very attractive and very maintainable in a kitchen environment. For metal cabinets, you should use a primer before you paint with latex. kitchen sink
