Food of the Week [Part II] : Kumquat

Kumquat RelishA few days ago, we highlighted the kumquat - a distinctive winter citrus packed with Vitamin C and potassium. Kumquats, along with the rest of the citrus fruits, also contain a cancer fighting compound called limonene, and studies have found that consuming citrus rinds can reduce one’s risk of developing some kinds of cancer. Kumquats are also high in other valuable nutrients including carotene, fiber, and Vitamin A.

Not only is the kumquat packed with nutrients, but it is a low maintenance fruit (no peeling required) that can either be tossed in your brown bag, chopped up and used as a garnish to salads, or mixed with your leftover holiday cranberries to make the tasty cranberry-kumquat-date relish listed below.

Recipe Profile

Perfect For: A nutrient packed side dish

Prep Time: 15 minutes (plus an hour of chill time)

Servings: 10

Ingredients:

1 (12-ounce) package fresh cranberries
1 cup kumquats, quartered
3/4 cup sugar
1/2 cup chopped pitted dates

Combine cranberries, kumquats and sugar in a food processor, and pulse 10 times or until fruit is coarsely chopped. Next, add dates, and pulse 5 times or until blended. Then, cover and let stand at room temperature for 1 hour and refrigerate until you’re ready to serve.
